When I looked in my fridge and noticed it contained only beer, cheese, and tortillas, I thought “man, that could make some mean nachos”. However, we will save nachos for another day. In the wake of eating 4 cheeseburgers in two days, I decided that salad was the way to go. Trader Joe’s will be your friend for this recipe, as I picked up all of the ingredients there.
What you will need:
- 1 bag spring mix salad
- 1 pre-chopped asparagus, mushroom, onion medley
- 1 box of grape or cherry tomatoes
- 1 package organic chicken thighs (6 thighs)
- 1 package Parmesan, Romano, and Asiago cheese blend
- 1 bottle red wine and olive oil vinaigrette dressing
- Your favorite dry rub mix that includes brown sugar
- Olive oil
Begin by heating up a saucepan with a bit of olive oil in it. Next, take the chicken thighs out of their package and toss them in a bit of olive oil. Then cover the chicken thighs generously in the dry rub mix. Place the thighs in your saucepan and fry until fully cooked, flipping when needed to get the carmelization of the brown sugar. When fully cooked, remove and let the thighs rest on a cutting board.
Next take out the asparagus, mushroom, and onion medley and fry it up in the remaining drippings from the chicken thighs, tossing when necessary. When fully cooked, remove the medley from the pan and place on a serving dish. Chop all of the tomotoes you will be using in half, and dice the chicken thighs. Place the thighs, medley, tomatoes, spring salad, cheese mix, and dressing in a bowl, toss and serve.
